Halloween 2006


It was a time for frightening fun and laughter! Everyone came out with their delicious treats, and I'm not talking about the food... wink!


Here's the recipe to the "Bloody-Boo-schetta"...muhahaha!

Ingredients:
1 long French baguette
1/2 lb. of mozzarella cheese (sliced)
1/2 cup of shredded mozzarella cheese
2 Roma tomatoes
2 whole tomatoes
3 cloves of garlic
1 1/2 cup of basil
3-4 tbs. sugar
4-5 tbs. of extra virgin olive oil
salt and pepper to taste


Start off by cutting the tomatoes and removing some of the pulp (this will keep the bruschetta from being too saucy). Place the chopped tomatoes, garlic, and basil in a food processor. Pulse the mixture a few times, while adding the EEVO or extra virgin olive oil. After it's been mixed, taste the it and add the sugar, salt and pepper to taste.

Transfer the tomato and basil mixture to an oven-safe dish and bake at 350 for 15 mins. This allows for all the ingredients to blend more evenly. While it is baking, slice the baguettes at an angle - about a 1/4 of an inch thick. Start arranging the baguettes on a baking sheet. Place the cut slices of the mozzarella cheese on top of each slice of bread. Take the mixture out of the oven and top each baguette with a small dollop. Sprinkle the shredded mozzarella on each and place the cookie sheet into the oven and bake for 7-9 mins., careful not to let the cheese burn.

Remove from the oven, let cool for a few minutes and enjoy! You can also garnish the dish with leftover basil leaves if you're planning on making this recipe for a special occasion!
